The quintessential summer vacation drink usually takes rum, but you can make a yummy non-alcoholic version with no trouble. Freeze some pineapple chunks and coconut water into cubes the night before, then put them in the blender with 1 can of coconut milk, 1/2 cup of coconut cream, 1/2 cup of pineapple juice and 3 tbsp of lime juice. Blend it all up together until thick and creamy, and garnish with fresh mint leaves and the mandatory maraschino cherry. You’ll think you’re back in the tropics in no time!
